converting utf8 to ISO 8859-1 (including chinese characters)

Dear all.

When converting UTF8 file that includes chinese characters into ISO 8859-1 with TextPipePro, version 7.2, I get blanks in return for the chinese characters. So far so good.

I am looking for a way to explicitly name a character to be chosen wherever the conversion fails or does not return a result other than a blank.

Thanks for your input.
